I made these adorable mini rainbow cupcakes. The kids loved these, I made these for my son's school classes as well and they were a huge hit, we are talking cupcake, candy and marshmallows, you can't go wrong with that. I baked mini cupcakes, topped with blue frosting and then used mini marshmallows for clouds, you just cut a small slit in them to help hold the Sour Patch Rainbow candy.
I used Wilton Color Mist spray to make gold Oreos and used these on top of a mini cupcake as well. Super easy to make, super cute and definitely St. Patrick's Theme Inspired. I found the Wilton Color Mist at Party City. I laid the mini Oreos on a paper towel lined baking sheet and lightly sprayed them, waited about 5 minutes, flipped them and sprayed the other side as well. My boys actually sprayed these and loved it. I placed these on green frosted mini cupcakes, they came out super cute.
I also brought Rice Krispie Treats, they are my favorite. If you read my blog you will see theme colored Rice Krispie Treats with whatever holiday we are celebrating at the time.
My favorite way to make Rice Krispie Treats is with a mini ice cream scoop, and to get the best Rice Krispies, make them in smaller batches, use the 3-3-3 rule.
3 Tablespoons of Butter
3 Cups of Mini Marshmallows
3 Cups of Kellogg's Rice Krispie Cereal
