Last night my family had a blast at Monster Jam in Sacramento at the Golden 1 Center!  My boys look forward to this show every year, it is one of their favorites.   My boys are 4, 8, 10 and 12 they all enjoyed the action-packed show, with high-flying, four-wheeling entertainment.  They had the drivers switch between their Monster Trucks, ATV's and Speedsters. Part of the fun is picking your favorite driver or Monster Truck and cheering them on.  We have a great time watching the crowd, cheer, shout and many times jump out of their seats rooting for their favorite truck and driver.  This show is action-packed and you never know what is going to happen, one truck lost its shell.  You have to stay until the end for the Freestyle event it is jaw-dropping seeing these 1200-pound machines perform tricks, and jumps at the hands of their skilled drivers.

During the show, you get to vote for your favorite truck with in-arena fan voting using your smartphone in the different categories such as donut competition and freestyle.  Results are shown on the big screen and the crowd cheers on their favorite.
There is an intermission time which I appreciated, I was able to re-charge my phone at one of the charging stations.  Taking lots of videos and pictures ate up my battery really quick, I was really grateful for the charging stations.

It is loud, my boys actually wore earplugs the very first time they went, but now they do not wear earplugs and they thought it was fine.  If you have a little one age 4 and under I would recommend ear protection if they are sensitive to loud noise. It is REALLY loud!

Be sure to reserve your parking before you go, it will save you money.  You can reserve parking at https://reserve.sacpark.org/ we try and always park at the 520 Capitol Mall Garage, it is a short walk and decent price. Another money saving tip is to purchase the Refillable Soda Cup, one of our favorites at the Golden 1 Center. They had light up Monster Jam Souvenir cup Sno-Cones, Popcorn in Monster Jam bags and a variety of food for sale.

Monster Jam Review | Sacramento Golden 1 Center 2020

Last night my family had a blast at Monster Jam in Sacramento at the Golden 1 Center!  My boys look forward to this show every year, it is one of their favorites.   My boys are 4, 8, 10 and 12 they all enjoyed the action-packed show, with high-flying, four-wheeling entertainment.  They had the drivers switch between their Monster Trucks, ATV's and Speedsters. My kiddos love buñuelo's, which are fried tortillas sprinkled with cinnamon sugar.  Of course they would rather have the real deal with homemade tortilla dough, but I usually use store bought flour tortillas and they still get devoured.  


Over the years we have made these as an afternoon treat, dessert after dinner, and sometimes just because.  With Valentines we make many food items heart shaped, even buñuelo's.  This is an easy treat your kiddos will enjoy and have fun using a heart shaped cookie cutter to cut out their tortilla.  
  
Ingredients:
12 Flour Tortillas
1 teaspoon Cinnamon
1/2 cup of Sugar
Canola Oil 

Directions:
Cut your tortillas to the desired shape, I normally do triangles, but since it's Valentine's, these are heart-shaped. You could use any shaped cookie cutters or do strips.

Mix together the cinnamon and sugar in a small bowl.

Heat your oil to fry the tortillas, you can use a wooden spoon placed in the hot oil once bubbles start to form around the wooden spoon it's ready to go, or dip a tortilla in and look for those bubbles.  You do not want your oil too hot, during the process if you notice the tortillas are browning too quickly lower the heat gradually.

Once light and golden brown transfer to a paper towel to drain off excess oil, and sprinkle both sides with cinnamon and sugar mixture while warm.  Coat and serve.  

These are best served warm.  If you need to make them ahead of time, just re-warm them in the oven, but not too long, don't use the microwave, or they will not be as crispy.  

If you want to take these up notch, you can serve them with vanilla ice cream and strawberries or serve with maple syrup mixed with caramel sauce, or drizzled with honey, oh my goodness!

In talking with friends and family, many have mentioned how it is more difficult to eat healthy on a budget.  I thought I would share some tips to keep in mind if you are trying to eat healthier and still stick to your food budget.  It is sad that processed foods are often times less expensive and available in greater variety.  I know fresh produce and meat can be more expensive.  With a little planning and preparation though it can be easy on any budget.  

Tip one is buy what is in season.  When you purchase fruits and veggies that are in season they will be less expensive.  Keep your eye out while at the grocery store for what is on sale.  Also keep an eye out for what they have in abundance, often times I will see a store will have a ton of strawberries and when you first see them they may be $2.99 each container.  Not always, but often if they don't sell, you will see them on sale for $0.99 in a week because they have to move them before they go bad.
Shop the "Special Day" Sales.  Our local Save Mart often does 3-day Weekend Sales.  Our local Safeway does Friday deals.  Our local Raley's does Monday deals.  watch the weekly grocery store ad's and you can find some great deals on certain items.  I like to watch these sales for Meat, Cheese and Snacks for my kids.  

Use coupons!  Coupons can help save and every little bit adds up.  In our weekly mail we get a Smart Source Coupon insert.  You can often spot coupons that you peel directly off products.  Of course you can purchase the newspaper for coupons as well.  I've scaled way back on bulk couponing, I used to be an extreme couponer, and purchase six copies of the newspaper every Sunday from the Dollar Tree.  Now I use the coupons that come in the mail, ones I find in the grocery store and my favorite is DIGITAL coupons and money saving Apps like IBOTTA.  If you have not tried Ibotta this is one of my favorite ways to save money.  Download the App, load the digital coupons and scan your receipt when you've finished shopping.  You will receive money back for purchasing specific items.  These savings add up over time.  This is a great way to save for Christmas, or to pay towards Debt.  An easy way to earn money back on items you are already purchasing.  I've earned money back on purchasing Keto items, Meat ($3 back on a roast), Almond Milk and so much more.  There are healthy item deals!  Thanks to Ibotta I've been able to stock up on my favorite Keto Ice Cream, Keto friendly frozen pizza's and so much more.  
Download your local grocery store App's too!  Most stores have an app and some kind of reward program, digital coupons you can stack on top of paper coupons and Ibotta rebates, which all add up to more savings.  Our local Save Mart does a Friday freebie, Safeway has the Just for U, savings and specials.  
Skip Diet foods and shakes unless on sale.  You will find companies marketing to Keto eaters, Paleo eaters and more.  I love purchasing Keto snacks, bars and shakes as much as the next person, but I try to limit these not only for my budget but I believe eating whole, natural foods are ultimately the healthiest choice.  I try and remind myself eat what God made, as much as possible.  If you do have a favorite Keto snack or treat, then keep your eye out for deals on those and stock up when on sale.  On of my new favorite Keto snacks is the Quest Chips, they are usually $2.98 for a small bag, once in a while I can find them at Winco for $1.98 and just recently they were on sale on Amazon so I bought a pack of 12.  

Menu plan.  I know we all know this it's just a matter of implementing it.  Take some time on a day that works for you to write out what you plan on eating each day.  My husband and I usually talk through and menu plan what we will eat for the week ahead on Friday or Saturday.  If you plan what you are going to eat this will eliminate frequent and last minute trips to the grocery store and will help you stick to a weekly food budget much easier.  Although we write out the meals we want to eat, then we are a little flexible when we go to the store, based on what is on sale.  If chicken is on sale then we switch up sometimes the meat we had in mind.  
Cook enough for leftovers.  I try and cook extra on certain items, so we can have leftovers for lunches and busier days.  Tuesday's are a busy day for us, so if I can make a larger amount on Saturday, or Monday we will often have those leftovers on Tuesday our busier day.  This also helps us save money when my husband has leftovers to take for lunch and he is not eating out.  
Bulk Bins.  If your local grocery store sells items in the bulk bins, you can often save money here.  Our local Winco has a great selection of items in the bulk bins.  I love to purchase almonds, and almond flour from the bulk bin I often can save money doing it that way.  I also will many times find spices less expensive this way.  
Plan out Organic purchases.  I'm all for buying organic as well, but I try and see if the benefit is really there.  For example fruits and veggies that are protected under a thick skin do not necessarily need to be organic.  So I'll save money on certain items and just buy regular.  If you grocery budget allows, splurge on organic Berries, Spinach, Kale, Meat and Dairy.  Foods to definitely skip buying organic Avocados, Pineapples, Bananas, Onions, Eggplant, Watermelon, anything with a thick skin or skin that is peeled off. 
Meatless Monday.  Really any day of the week, just pick a day in your week to have a meatless meal. This can help stretch your grocery budget.  One of our favorite meatless meal is cooking breakfast for dinner.  Our kiddos love pancakes, waffles or french toast for dinner every so often.  Since my husband and I eat Keto, we will do eggs, omelette style or egg burrito in a low carb tortilla.  We've also done large salads, which can be filling if you fill it with veggies, broccoli, peppers, mushrooms and such.  My kiddos love quesadillas, macaroni and cheese, grilled cheese sandwiches,  

My favorite budget friendly grocery stores are: Winco, Save Mart, Grocery Outlet, Walmart, and Costco or Sam's Club. I watch for great items on the $5 Friday at Safeway and the $5 Monday deals at Raleys/Bel-Air.

Eating Healthy on a Budget

Did you know January 5th is National Keto Day?  I had no idea Keto has become so popular that it has been given it's very own day!

With each New Year, comes goal setting, many have "lose weight" on their goal list.  I know it has been on my goal list for many years.  2019 was the first year in over a decade that I stuck to my new Keto eating lifestyle consistently throughout the year.  you can read about my journey here
I thought I would share some basic things to help if you are just starting out. 

Clean out your refrigerator and pantry.  Get rid of all the junk food, give it to someone, throw it out, don't wait until you finish it.  This one can be difficult if you live with other people who are not joining in on your journey.  If you are not completely getting rid of junk food I highly recommend having a designated cupboard for your healthy eating snacks.  Have a shelf and drawer in the refrigerator that is yours.  I have four boys who love cookies, chips and all the carbohydrate things.  Keeping their stuff separate has helped me, especially in the beginning when those carbs were so tempting.  I have a shelf and drawer that I mostly use.  I have trained myself not even to look in their cupboard.  As a result of this I will admit we have run out of stuff a lot more this year, but that is okay, they really don't need all that processed food anyways .
Meal Prep.  This is key!!!  Don't wait until you are hungry to try and find something healthy to eat.  Always have salad on hand.  Some of my easy go to items that I always have available are string cheese, salami, celery, berries and nuts.  Salad or these things may not sound appealing, but many times when hunger strikes, if I have a small salad, while I cook a chicken breast, or while I wait for a piece of fish to bake, then I am not as short tempered, famished and reaching for the wrong things.  Especially when you are first getting started.
Keep on hand Keto friendly Grocery Essentials. For each person this list may vary a little so make your Keto essentials list and keep it handy.  This is my list that I keep in my Notes on my phone: Eggs, Cheese, Bacon, Sausage, Heavy Whipping Cream, cream cheese, Broccoli, Cauliflower (fresh, frozen riced cauliflower), Spaghetti Squash, Zucchini, Celery, Berries (strawberries, blueberries, blackberries), butter, mushrooms, spinach, onion, avocado, kielbasa, salami, cucumber, bell peppers, pork rinds, beef jerky, almonds, meat (chicken, ground beef, steak, pork roast, fish).  Here is a free printable list, you can click on the image below as well.   
Keep it simple at first.  It may sound boring, but I find if when you first start you if you rotate a handful of meals, that don't require a lot of extra ingredients, it will help you be consistent. 
When I first started I did not try a lot of Keto or Low Carb recipes, I just kept it simple.  Eggs/Omelette with sausage or bacon for breakfast.  Salad for lunch.  Meat, Veggie and Salad for dinner.  I snacked in between meals with salami, string cheese, almonds, celery and berries if I wanted something sweet.  After I lost fifty pounds is when I started trying new recipes with almond flour and monk sweeteners.  There are a ton of recipes out there to help you stick Keto and still satisfy your cravings.  This past December I made Keto Tamales and they were amazing!!!  So you will get there, but at first I say keep it simple (pick a protein, pick a veggie or two and add in a fat (butter, bacon, avocado, nuts, eggs, cheese).

Make it your goal to stick to under 20 carbs a day and move daily.  I walk daily.  Simply going on a walk on your lunch hour or after dinner will make a huge difference.  I find it makes an impact on your mental health more than anything.  You will feel better knowing you are making an effort.  Walking daily is another way for me to align my actions with what I want to achieve. 
Don't give up.  If you slip up and eat something you shouldn't, don't blow the entire day, or weekend.  In my past, that is what would happen to me.  I would have something I shouldn't and then go overboard and say well I'll start back tomorrow.  I am so grateful this changed for me in 2019, I had some things throughout the year that are not low carb, but I never went overboard which was a huge victory over food for me. 

Skip the Scale.  In all of 2019 I only weighed myself at my doctor appointment and right before I went on my cruise in December.  I think this was a huge help in sticking to this eating lifestyle.  I chose to not make it about what the scale said and more about how I felt and how my clothes were fitting.  It is recommended by many to take measurements and use that as a tracker.  I did not do measurements, I felt that this time around I was choosing the Keto eating lifestyle as just that a lifestyle, not a diet.  The truth is no one needs sugar and and processed foods.  I feel I had greater success this time around by shifting my focus to a healthy lifestyle rather than a diet or "to lose weight". 
Just get started!  You will thank yourself this time next year.  I know everyone wants to lose weight fast.  The truth is there is no magic pill or magic diet.  The diet that works is the diet that you work.  So if that is Weight Watchers, Paleo, or Keto just know it takes time.  Just like we added the weight one bite at a time, that is the same way we have to lose the weight.  One day at a time, just keep moving in the right direction, each day making healthier choices.  It does get easier!  It eventually does become a new way of eating and living, it just takes time.  Seeing before and after pictures has been the biggest eye opener for me, but again, these pictures are a year apart.  Commit to stick to a healthier way of eating for a year, once you see the benefits and feel better you will want to continue.  

Community.  I strongly encourage you to find your local Keto community.  I am so grateful for a local Keto meet up I attended, I met some great people who share recipes, products and things that work for them along this journey.  They bring encouragement and tips that help keep me on track.  You can find Keto and Low Carb groups on Facebook and people who share menu ideas on Instagram.  Connecting with fellow Keto eaters will help keep you inspired and motivated.

In Honor of National Keto Day | Keto and Low Carb Tips for Beginners


Did you know January 5th is National Keto Day?  I had no idea Keto has become so popular that it has been given it's very own day!

With each New Year, comes goal setting, many have "lose weight" on their goal list.  I know it has been on my goal list for many years.  2019 was the first year in over a decade that I stuck to my new Keto eating lifestyle consistently throughout the year.  you can read about my journey here
I thought I would share some basic things to help if you are just starting out.

I first learned of Gather Studio and Marketplace when they invited me to attend their one-year anniversary celebration, it is an art studio that offers creative DIY classes.  My sister-in-law joined me and we had an amazing time on Small Business Saturday.  We made a hanging succulent and a gratitude jar.  All of the supplies were ready to go, and owner Meleya instructed us on how to create our craft project.  When I told my husband about this place he put it perfectly, "so it's like a Build a Bear Workshop for adults." Exactly!

I love the workshop space and I love that is also doubles as a shop for local vendors.  You will find a variety of items all locally hand crafted.  This is a great place to find unique gifts and high quality items.  They have home decor items, bath bombs, lotions and more.  They have handmade jewelry, stunning leather bags, scarfs, apparel and so much more.   They offer personalized service and unique items you won't find elsewhere.  I absolutely adore these handmade pots for plants.  

Meleya shared with us that she was a stay at home mom, jewelry maker herself and wanted to pursue something more.  She opened Gather Studio and Marketplace as a creative outlet to share her passion and also provides space for other local creatives.  In just the short year they have been open they have brought in a substantial amount of revenue for local creatives.  I love supporting our local businesses.  As a local creative I know how important and vital it is to have local support.  When you shop local not only do you help your local economy, you connect with the people who live, work and worship in your community.  When you shop local you support the American Dream and have a positive ripple effect right where you live.

After seeing this great place I knew I wanted to come back soon.  This past week a group of us ladies celebrated my mother-in-laws birthday here.  It is the perfect place to gather with friends and have fun creating things together.  We chose the Jewelry Stamping Class, and it was a great learning experience.  We each were able to choose two pendants and personalize them.  Some of us chose to adventure out and spell out a long name, others went with numbers for birth date pendants, others used symbols, I love the way my sister-in-law's bird pendant turned out.  

All the ladies that joined us expressed what a great time they had and how fun it was to celebrate a birthday with a hands on experience.  We are looking forward to attending another class soon.

I love the workshop space and I love that is also doubles as a shop for local vendors.  You will find a variety of items all locally hand crafted.  This is a great place to find unique gifts and high quality items.  They have home decor items, bath bombs, lotions and more.  They have handmade jewelry, stunning leather bags, scarfs, apparel and so much more.   They offer personalized service and unique items you won't find elsewhere.  I absolutely adore these handmade pots for plants.  

Meleya shared with us that she was a stay at home mom, jewelry maker herself and wanted to pursue something more.  She opened Gather Studio and Marketplace as a creative outlet to share her passion and also provides space for other local creatives.  In just the short year they have been open they have brought in a substantial amount of revenue for local creatives.  I love supporting our local businesses.  As a local creative I know how important and vital it is to have local support.  When you shop local not only do you help your local economy, you connect with the people who live, work and worship in your community.  When you shop local you support the American Dream and have a positive ripple effect right where you live.

After seeing this great place I knew I wanted to come back soon.  This past week a group of us ladies celebrated my mother-in-laws birthday here.  It is the perfect place to gather with friends and have fun creating things together.  We chose the Jewelry Stamping Class, and it was a great learning experience.  We each were able to choose two pendants and personalize them.  Some of us chose to adventure out and spell out a long name, others went with numbers for birth date pendants, others used symbols, I love the way my sister-in-law's bird pendant turned out.  

All the ladies that joined us expressed what a great time they had and how fun it was to celebrate a birthday with a hands on experience.  We are looking forward to attending another class soon.
