During the summer months, I crave all the summer things, watermelon, agua frescas, and beach days! Since I am trying to eat low carb/keto I try and limit my watermelon intake because I could eat an entire watermelon by myself. I also had to try and make a low-carb keto-friendly Agua Fresca de Pepino which is a refreshing cucumber lime drink. 

This drink was super easy to make and taste just like a regular homemade Agua Fresca de Pepino. I also love this drink recipe because it calls for just a few ingredients.  

Ingredients:

3 Cucumbers

2 Lemons

4 Limes

1/2 to 1 Cup of Low Carb Sweetener of your choice

How to Make:

Peeling the cucumber is up to your liking, I peeled them about halfway, save 1/4 of one of the cumbers for garnish or feel free to use all three in the blender.

Juice the two lemons into the blender, use a strainer to keep the seeds out.

Cut the limes in half, and I also tried to cut off some of the skin, leaving some skin on.

Toss into the blender the chopped cucumbers and 4 limes add 1 cup of water and blend. I used my Ninja Blender which I love, it did a wonderful job of blending everything. 

In a pitcher pour in the strained blended cucumber, and lime juice, reserve some of the pulp, if you like pulp, you can add some back in. I added a  large spoonful of the pulp back in.

Add in 1/2 cup of low-carb sweetener of your choice.  I say start with a 1/2 cup and then increase to a cup depending on how sweet you like it. 

Add in 4 cups of water and 4 cups of ice, stir and serve!

I love Tajin, so I put Tajin on the outer rim of my mason jar.  Rubbed the rim of the mason jar with a lime and then dipped it into the Tajin, on a plate.   

A couple of notes, I was happy with using only 1/2 cup of the sweetener, but since this was also for my kiddos, they thought it was too tart and wanted it sweeter so I ended up using 1 cup of sweetener.

You could also use only limes, I just used the two lemons because I already had them on hand. I will say I think the lemon juice helps balance out the tartness when using limes only. 

This will definitely be my go-to drink all summer long, so easy to make and so refreshing. Pour me a glass of this low-carb Agua Fresca de Pepino alongside some keto-friendly tacos or fajitas and you will find one happy mama.

Agua Fresca de Pepino Recipe - Low-Carb Keto-Friendly Version

The brand NEW Leatherby's Family Creamery in Lincoln, CA is now OPEN!!!! We have been anxiously awaiting this brand new location.  We were so excited to attend a soft opening this past weekend and enjoy some of our family favorites.  

This brand new location is located at 610 Twelve Bridges Drive in Lincoln, CA.  It is absolutely beautiful inside and out.  There are outdoor tables and plenty of seating indoors.  They are well prepared with three entrances, the main entrance, a to-go- entrance, and a Deliver/App Order Entrance, talk about efficiency.  

Leatherby's is locally owned and is known for giving back to our local schools and communities.  They have three other locations, Arden, Elk Grove, and Citrus Heights.  It gives you that old-fashioned ice cream parlour vibe, everyone is so friendly and we absolutely love it every time we visit.

Leatherby's has become the place we love to celebrate, birthdays, special achievements from school, or soccer and it is one of our favorite places for date night.  My husband and I actually had one of our very first dates at the Arden Leatherby's and shared one of their HUGE banana splits. 

I love their Chicken BBQ Ranch Salad, and our lovely waiter let me know you can also order it with tri-tip! I will definitely have to do that on our next visit.  This salad is HUGE just like their ice cream creations.

At least one of my kiddos usually orders a milkshake, which I love how they are like the old-fashioned milkshakes where you get a glass and extra in the metal tin.  My youngest usually goes with the Jamie's Clown Sundae, it is so adorable.  On this visit, we also ordered some kids' chicken tender meals and a Black and White Sundae.

We also had to buy their famous caramel and chocolate sauce to take home for home creations, so delicious.

If you are in the Lincoln area, you are going to LOVE having Leatherby's in your neighborhood and if you are in the Sacramento area, this beautiful location is worth the drive!

Located in the Palladio at Broadstone shopping area, our family had the pleasure of visiting recently and we built memories sure to last a lifetime. This was not our first visit to SeaQuest, we were pleasantly surprised by NEW interactions such as the Fishy Kisses experience. 

Have you ever seen those fish tanks where people place their feet in them? That is the Fishy Kisses Experience! We were full of giggles, as we are all quite ticklish, after the first ticklish moments, it is quite relaxing! 

SeaQuest is such a unique interactive learning experience! You'll learn about all types of animals, sea creatures, birds, fish and so much more.  As a parent, I was really impressed by how much discovery and learning takes place, our kiddos were able to ask a ton of questions. Ranging in age from 6 to 14 our boys were fascinated by each animal they didn't realize they were also learning. You really become immersed so much more than most zoos or aquariums because of the ability to touch, pet, feed, and interact at each exhibit.


At SeaQuest you will see, touch, and feed all sorts of fish, birds, rabbits, a giant tortoise, Sydney the Sloth,  and of course as the name SeaQuest indicates a variety of other sea creatures.  On this visit, two of our boys swam with Sting Rays and sharks, such a unique experience. They put on wet suits and climbed in the Sting Ray tank to snorkel and even come up close with a baby great white shark. 


We loved feeding the playful Sea Otters, they will eat pieces of fish right from your hand! We also LOVED feeding the adorable Sydney the Sloth and the Sassy Porcupine. So fun learning about each of the animals' habitats and personalities.


Conveniently located, SeaQuest immerses you in a complete world of adventure. With exhibits packed to the gills with flashy fish, brightly-colored birds, riveting reptiles and more, it’s a splash of adventure for families and kids of all ages.

There are themed rooms that you walk in such as the Amazon Rainforest room, The Fantasy Caves of New Zealand, The Egyptian Desert Room, Caribbean Cove and more.   Throughout the rooms, you will find signs with cool facts such as "Creature Feature" and "Where in the World?" information.  Some signs and TV's feature slides with "Did You Know?" facts and information about the exhibit. 

Summer break is a great time to visit, it is indoors, a great way to escape the Sacramento heat.  I do recommend scheduling a tour, especially if you plan on doing some of the extra experiences such as Fishy Kisses, or Swimming with Sting Rays.    All of the tour guides are so informative, friendly, and helpful.  

We stayed for about four hours, my kiddos could have wandered through as long as I would have let them.  You can purchase tokens to purchase food to feed the animals.  If you take a tour, some tokens will be provided for you.
