National Read Across America Day is held annually on March 2nd in celebration of Dr. Seuss Birthday.  This celebration began in 1997 to celebrate Dr. Seuss, American artist, book publisher, animator, poet, who has authored over 60 children's books. 

My kiddos have all loved Dr. Seuss books, the funny rhymes, the crazy named characters, and that loveable Cat in the Hat.  We still have some Dr. Seuss books that were mine as a child that my children now enjoy.  One of my most favorite Dr. Seuss sayings is "Today you are you, that is truer, than true.  There is no one alive who is youer than you."  If you are looking to add to your Dr. Seuss collection look for the book titled "Seuss-isms"! In this book you'll find inspiring quotes and unforgettable illustrations from countless Dr. Seuss classics!

National Read Across America Day is to celebrate the joys of reading.  It also brings awareness to the importance of reading in education and helps to motivate kids to read more.  
As a parent I absolutely adore when my kids want to read a book.  There is so much joy especially in this technological world we live in.  My kids, like so many others love their electronic devices.  I look for every opportunity to foster a love for reading.  What better way to inspire them to read than with fun snacks and treats inspired by some of our favorite Dr. Seuss books.  An easy treat to enjoy while reading "Mr. Brown can Moo! Can you?" is chocolate milk.  Having chocolate milk while you read is a great way to help a little one not be as squirmy while you read.  

Over the years on National Read Across America Day I have surprised my boys with Dr. Seuss themed treats to encourage reading fun with my family at home.  My boys have taken some of these yummy treats in to share with their classmates on this week. I have also sent them to school with a Seuss Inspired sack lunch, what a great way to surprise your kiddo. 
Did you know our local Save Mart and FoodMaxx supermarkets participate in National Read Across America Day with their Adopt a School Program.   Save Mart and FoodMaxx will adopt your school, send someone to read to your child's class and donate the book to the class.  How neat is that! Be sure to share that information with your kids school teachers so they can partake in this great benefit.  This is one of the many reasons I love shopping at Save Mart, they give back to our local communities.

Cat in the Hat Kabobs
What you need: Skewers, Marshmallows, Strawberries (on sale right now at Save Mart Buy 1 Get 1 Free), Bananas and an edible marker to draw the Cat in the Hat face.

These are easy to make, super cute and fun to eat.  Kids love eating food off a stick and this is easy enough for them to help assemble.

Popcorn (Hop on Pop)
What you need: Popcorn, easy peasy!
Popcorn is one my boys favorite after school snacks.
Jello Cups with Gummy Fish (One Fish, Two Fish, Red Fish Blue Fish)
What you need: Jello, Whip Cream, Gummy Fish or Swedish Fish Candies.
Make Blue Jello in individual cups, refrigerate.  Top with Whip Cream and Gummy Fish.
Truffula Themed Cupcakes (The Lorax)
What you need: Mini Cupcakes, Frosting, Pretzel Sticks and Cotton Candy.
Bake your mini cupcakes, let cool and frost.  Top with a Pretzel Stick topped with Cotton Candy.
Green Pancakes (Green Eggs and Ham Theme)

Here is an easy DIY Cat in the Hat themed snack cup carrier you can easily create. You probably already have everything you need.
What you need:
White Paper Cups
Stapler
Red Sharpie or Marker
A strip of Card Stock Paper for the handle

Directions:
First color the red stripes on the cup to resemble the Cat in the Hat. We colored three cups.
Next staple all three cups together.
Then make a handle using the strip of card stock paper and staple to the cups.  
Finally fill the cups with your little ones favorite snacks.  

We used the rainbow Gold Fish in honor of One Fish, Two Fish, Red Fish, Blue Fish.  Sliced Apples for Ten Apples Up on Top and Grapes for Truffula fruit.  
This was an easy, fun craft to make with my little one.  He loved snacking while I read to him.  Having books read to him is one of his favorite things to do.

DIY Dr. Seuss Cat in the Hat Snack Cups

National Read Across America Day is next week, we are all about Dr. Seuss themed snacks and books right now.  Our boys school, has planned fun Dr. Seuss themes all week long and we are jumping on board all the fun, celebrating at home.  My little guy is loving it!

Dignity Health Mercy San Juan Medical Center has broken ground on a $35 million Neonatal Intensive Care Unit expansion project.  All four of my babies were born at Mercy San Juan Hospital.  Thankfully we did not have need of the NICU, my heart goes out to those mothers and families who often spend months making many visits between home and the hospital to see and care for their preemie.  


The new unit will grow from its current size of roughly 1,200 square feet to nearly 18,000 square feet when the project is completed in the summer of 2020.  This new NICU will have state of the art equipment and parents will be able to have a private room with their NICU baby.  Being able to room with your preemie baby and have a place to shower and refresh while you are already mentally and emotionally strained is priceless and an extreme need in our community.

Dignity Health's Neonatal Intensive Care Units (NICU) in the Greater Sacramento region at Mercy San Juan Medical Center and Methodist Hospital of Sacramento are equipped with the latest technology and specially-trained staff to care for babies who are seriously ill or born prematurely.

Mercy San Juan's NICU has long been a leader in caring for the smallest of newborns. The most recent data from the Vermont Oxford Network shines an even brighter light on the healthcare professionals who make up the Level III NICU - including neonatologists (doctors specializing in premature and high-risk babies), registered nurses, respiratory therapists, developmental specialists, lactation consultants, dietitians and pharmacists.


Mercy San Juan's NICU includes 26 licensed beds and is equipped to provide specialized care including invasive monitoring, conventional ventilation, surgery, transport service, inhaled nitric oxide and high frequency oscillator ventilation. It is located on the third floor of the Family Birth Center, adjacent to the 32-bed labor, birth, recovery and maternal/infant unit, high-risk pre-birth and post-birth unit, two operating suites, visitors' waiting room and appropriate support areas. And for new moms who are unable to provide enough breast milk for their baby, Mercy San Juan proudly provides donor breast milk to ensure your baby gets the nutrients they need. Last night we attended the Disney on Ice opening night of "Mickey's Search Party" at the Golden 1 Center.  This is the first time this show has come to Sacramento! We have been going to Disney on Ice shows since my oldest was one and he is going on thirteen.  This show was by far my all time favorite!  We were ecstatic to see Mickey, Minnie and friends as they introduced us to some of our Disney favorites, Beauty and the Beast, Toy Story, Moana, our favorite part of the show Coco, some Pirate action with Captain Hook, Aladdin, The Little Mermaid and Frozen. You can catch Mickey's Search Party at the Golden 1 Center all this weekend February 13-17, 2020.
As part of the media, we were treated to pre-show fun.  I am so grateful for these unique and special opportunities.  They had Disney-Pixar's Coco inspired arts and crafts as well as snacks and a special visit from Minnie Mouse. This show has only toured thirty-three cities in the 2019 season.  There are approximately forty Disney characters featured in this show. 
The show opens with Mickey and his friends dancing and getting the crowd excited, that is one unique part of this show, there was a lot of crowd interaction.  Captain Hook and his pirates trap and capture Tinker Bell and her wand.  The only way Tinker Bell can be set free is to fill up the Magic Meter.  You are then taken on a magical journey, a "Search Party" to search for clues to fill up the Magic Meter, with all the Disney favorite songs.  You'll enjoy "Be our Guest" from Beauty and the Beast, Toy Story action with Andy's Toy Box.  You'll sail away with Moana which I loved this rendition of the show, enjoy "How Far I'll Go", sing along with Maui in "You're Welcome", and more!  My absolute favorite part of the show was Coco, with "Remember Be" and "Un Poco Loco" I only wish this part was longer, the beautiful dancing and colorful costumes were fantastic.  Each story helps fill the Magic Meter and fill our hearts, we absolutely loved singing and dancing a long.
This show is absolutely AMAZING, you will not regret attending!  There is jaw dropping acrobatics, spectacular dancing, stunts, and fun surprises throughout the presentation.  Characters come from all sides of the Golden 1 Center, they are up and down the aisles, the Toy Story toy box fun is interactive with a giant ball bouncing through the audience.  This show has one of the fastest costume changes done in less than thirty seconds. There was a flying blimp from Hawaiian Airlines dropping some sort of surprise, I have no idea if it was free airline tickets or discount coupons.  Somebody please let me know if you find out.  
There is a brief intermission after the Coco presentation which is great for bathroom breaks, and to replenish your refillable soda cup (the best deal at Golden 1).  After intermission the show starts back with Captain Hook and the Pirates, followed by everyone's favorite Genie, sing along with "Never Had a Friend Like Me" from Aladdin as well as my favorite "A Whole New World", I only wish there was a magic carpet visit, but they still did a great job.  You are then transported "Under the Sea" with the Little Mermaid.  For the Little Mermaid part they changed up the classic song "Kiss the Girl" a bit and I absolutely loved this rendition.  The show closes out with Frozen which is a little different in this show too!  Kristoff and his friends do some great ice skating tricks and flips with ramps.  Normally the Frozen part has all the girls excited and singing along, my boys really enjoyed this change up with exciting jumps and stunts.  We girls were still able to sing our hearts out to "Let it Go".  In true Disney style, we get our happy ending with Tinker Bell's return.  You are also treated with a grand finale visit of all the characters and some favorite friends like Tiger and Winnie the Pooh.  Out of all the Disney on Ice presentations I have seen, this one by far is my favorite!  

Be sure to save money by reserving parking ahead of time with SacPark.org or ParkingPanda.com.  It is super easy, I reserved parking right on my phone, it gave me a QR code to scan.  Most parking garages are a short walk, and there are crowds of people parking and walking with you to and from the Golden One Center. Even at night, it was well lit, and there are crowds of people parking and walking with you to and from Golden One Center.  If it is your first time visiting the Golden One Center, I recommend you give yourself plenty of time to arrive and locate parking, especially allocate time for traffic flow.  There are quite a few parking garages to choose from or street parking if available.

  • Reserve your parking space ahead of time!
  • Arrive early!  I like to arrive between 6 PM - 6:15 PM (Find parking, Go through Security, Use the Restroom, shop the Vendors).
  • Park near a light, it is dark when you leave and this makes it easy to find your car.
  • In the middle of the show there will be a intermission time.  As soon as you hear the intercom announcement coming on, hurry to the restrooms, you will avoid the lines.
  • If  you are are purchasing a snow cone or souvenir from the concession vendors, I recommend, purchasing before the show starts or at the beginning of intermission.  The lines are long if you hesitate during intermission.
  • They sell popcorn and cotton candy right at your seat.
  • Snow cone souvenir cups depending on the character cup you choose are $18 & $14.
  • Popcorn comes with a Disney Mickey Bucket for $18, or a smaller version in a box is available for $10.   
  • Cotton Candy comes with a Souvenir hat and is $18.
  • If you have little ones that want to dress in their princess dresses or Disney costumes, do it, there are many kids dressed up.  My boys usually wear their favorite Disney T-Shirt.
  • My boys love that I bring glow in the dark necklaces/bracelets from the dollar store. They do sell spinning and light up toys, being a frequent Disney on Ice attendee, they already have the spinning and light up toy and sword.

  • Baby bags, plastic bottles, and formula are permitted in Golden 1 Center as long as the bag is no larger than 16” x 16” x 8".

My sister and I took a girls trip to the Happiest Place on Earth, Disneyland! Even though I was on vacation, I made it my goal to stick with my Keto eating lifestyle.  I am so proud of myself for not caving in while being surrounded by all the Disney famous treats Dole Whip, Mickey Beignets, Churros, Mickey shaped pretzels and all the sweet Disney themed treats.  
I cannot say that I will never indulge, because I have, but I have worked on changing my mindset when it comes to food.  I have yo-yo dieted for too long, and kind of was forced into sticking with it this time with some recent health issues.  After seeing how much eating the wrong stuff affects my body, Keto and low carb eating has become a way of life for me.  It is a process and journey, I think everyone has to discover for themselves what will work for the long term.  Again my health has been a huge motivator, I know I hate dealing with inflammation and joint pain as a result of eating the wrong stuff.  So I have had to be mindful of how my body feels with what I eat.   

Disney parks allow you to bring food and snack items into the parks which is a huge benefit if you are watching what you are eating or have food allergies.  If your hotel has a mini fridge you can have your favorite keto and low carb items readily available.  Be sure to check if the hotel you are staying at has Amazon lockers, that is a great way to save money too.  You can have delivered to your hotel water bottles, string cheese, pickles, peanuts.  I would have Quest Protein Chips, Heavy Whip or Almond Milk for my morning coffee.   

You will find quite a variety of healthy options at the Disney Parks, Keto options like their giant pickles, veggie cups, mini Babybel cheese and more.  
This was a quick trip so we did not do restaurant reservations on this visit, we planned on eating quick service meals.  

At Disneyland I started my morning with a Keto drink at the Disneyland Starbucks, I'm not a big breakfast eater to begin with, but they do have Keto Breakfast options in the parks.  At the Disneyland Starbucks you can find bacon and egg and sausage sandwiches just take off the bread.  While at the Disneyland Starbucks be sure to pick up the old time phones, there are special greetings you will hear.  

You can also find eggs, bacon, and Keto breakfast options at Jolly Holiday and Carnation Cafe.  If you are with your family and want to do a character breakfast, Plaza Inn does Minnie and Friends, they have a breakfast buffet, you can load up on eggs and bacon and your family can still enjoy Mickey waffles and pictures with their favorite Disney characters.  You can even have an omelette made for you. You must make reservations ahead of time to enjoy the Character breakfast. 

For lunch I had the Banyan Beef Skewer and a Safari Skewer which is bacon wrapped asparagus from Bengal Barbecue across from the Indiana Jones and Jungle Cruise rides.  I mobile ordered which I absolutely love! We bypassed the line and had our food in less than five minutes.  Even on a mobile order I was able to select sauce on the side.  These two skewers were the perfect Keto lunch time snack.  I felt satisfied and we continued on our day.  


Some other Keto options are available at Pizza Planet, they have a variety of salads.  We always go to Pizza Planet, it's my boys favorite place.  You could request a lettuce wrapped burger at Galactic Grill. Blue Bayou has roasted chicken, fish and other meat options.  Rancho del Zocalo has roasted chicken, and carne asada.  Remember to ask for substitutions when needed.  Plaza Inn is famous for their fried chicken, it comes with green beans and mashed potatoes, you can ask for double green beans instead of the mashed potatoes.  


You can also check out the Bratwurst Sausage at Troubadour Tavern, the Pastrami burger at Red Rose Tavern, you can also get a lettuce wrapped burger here.  Daisy's Diner has a Chicken Cobb Salad.  Star War's Galaxy's Edge at Docking Bay 7 has the Endorian Roasted Chicken salad, just order it without the quinoa.  Ronto Roasters has the Ronto Wrap which is a grilled sausage wrapped in a pita, just toss the pita wrap and your good to go.  While visiting Star Wars Galaxy's Edge be sure to pick up a Diet Coke Thermal Detonator.  I love these, a souvenir and drink in one.  There was a TSA ban on these, I asked a Disney cast member and she told me the ban had been lifted.  I successfully traveled home with my Thermal Detonator, empty of course.
For Dinner we ate at Hungry Bear in Critter Country, near the Winnie the Pooh ride and Splash Mountain, this is one of my favorite places to eat with kiddos, they have great kids meals.  They also have mobile ordering at this location.  We opted to just get in line as there was only one other person in front of us.  I ordered a lettuce wrapped bacon double cheeseburger and opted for the onion rings instead of fries.  Again that was the biggest splurge I did my entire trip.  You could opt for the coleslaw or possibly ask to swap for a side salad or grilled onions.  
I wanted to buy a pickle but after eating my peanuts and Ketofit Bar, was not hungry.  You can also find giant Turkey Legs.  While I am sure they probably have sugar in the brine, I still feel this is a great option especially if you share it.  

Another Keto-Friendly restaurant to keep in mind is Tortilla Jo's located in Downtown Disney.  We usually plan to spend some time shopping and browsing Downtown Disney either the day we arrive in town or the day we are leaving.  Tortilla Jo's has a quick service window for to go and quick meals outside, they serve bowls, which are perfect for Keto eating.  On this trip we had time to waste before our flight left so we went into the restaurant and they were very accommodating.  I explained that I was looking for something Keto and my waitress suggested the Pork Carnitas plate, Since I requested no rice and beans she kindly offered if I would like a side of grilled veggies.  I am so grateful, it came with spinach, zucchini, and grilled onions.  This plate was huge, satisfying and delicious.  If you are staying at the Disneyland Hotel which is right by Downtown Disney or even at the Grand Californian, this would be a convenient place to eat at on your way back to your hotel.  Eating inside the restaurant is going to be more expensive so if you are trying to stick to a budget, I recommend eating outside at the Quick Service Taqueria Window.  There is plenty of seating outside.  I actually saw this option at quite a few restaurants in the Downtown Disney District.  



One thing I wish I would have brought into Disneyland is a reusable collapsible water container.  At Disneyland they have water refilling stations and we chatted with a couple who had these really cool silicone reusable water containers.  I drink a lot of water, so this is a necessity next time.  You can ask for water from any of the restaurants and they will give you a free cup of water and ice which I did a few times, a reusable water bottle would have been better.  There are no water refilling stations at California Adventure, I hope they change that soon.

Sticking with your Keto eating lifestyle while at the Disney parks is very doable and I am looking forward to my next visit to find and try more Keto food items.  I am very impressed with how many places are aware and mindful of all types of eating plans (Vegan, Gluten Free, and those with Food-Allergies) they really do aim to provide healthy eating options. You can also find eggs, bacon, and Keto breakfast options at Jolly Holiday and Carnation Cafe.  If you are with your family and want to do a character breakfast, Plaza Inn does Minnie and Friends, they have a breakfast buffet, you can load up on eggs and bacon and your family can still enjoy Mickey waffles and pictures with their favorite Disney characters.  You can even have an omelette made for you. You must make reservations ahead of time to enjoy the Character breakfast. 

For lunch I had the Banyan Beef Skewer and a Safari Skewer which is bacon wrapped asparagus from Bengal Barbecue across from the Indiana Jones and Jungle Cruise rides.  I mobile ordered which I absolutely love! We bypassed the line and had our food in less than five minutes.  Even on a mobile order I was able to select sauce on the side.  These two skewers were the perfect Keto lunch time snack.  I felt satisfied and we continued on our day.  


Some other Keto options are available at Pizza Planet, they have a variety of salads.  We always go to Pizza Planet, it's my boys favorite place.  You could request a lettuce wrapped burger at Galactic Grill. Blue Bayou has roasted chicken, fish and other meat options.  Rancho del Zocalo has roasted chicken, and carne asada.  Remember to ask for substitutions when needed.  Plaza Inn is famous for their fried chicken, it comes with green beans and mashed potatoes, you can ask for double green beans instead of the mashed potatoes.  


You can also check out the Bratwurst Sausage at Troubadour Tavern, the Pastrami burger at Red Rose Tavern, you can also get a lettuce wrapped burger here.  Daisy's Diner has a Chicken Cobb Salad.  Star War's Galaxy's Edge at Docking Bay 7 has the Endorian Roasted Chicken salad, just order it without the quinoa.  Ronto Roasters has the Ronto Wrap which is a grilled sausage wrapped in a pita, just toss the pita wrap and your good to go.  While visiting Star Wars Galaxy's Edge be sure to pick up a Diet Coke Thermal Detonator.  I love these, a souvenir and drink in one.  There was a TSA ban on these, I asked a Disney cast member and she told me the ban had been lifted.  I successfully traveled home with my Thermal Detonator, empty of course.
For Dinner we ate at Hungry Bear in Critter Country, near the Winnie the Pooh ride and Splash Mountain, this is one of my favorite places to eat with kiddos, they have great kids meals.  They also have mobile ordering at this location.  We opted to just get in line as there was only one other person in front of us.  I ordered a lettuce wrapped bacon double cheeseburger and opted for the onion rings instead of fries.  Again that was the biggest splurge I did my entire trip.  You could opt for the coleslaw or possibly ask to swap for a side salad or grilled onions.  
I wanted to buy a pickle but after eating my peanuts and Ketofit Bar, was not hungry.  You can also find giant Turkey Legs.  While I am sure they probably have sugar in the brine, I still feel this is a great option especially if you share it.  

Another Keto-Friendly restaurant to keep in mind is Tortilla Jo's located in Downtown Disney.  We usually plan to spend some time shopping and browsing Downtown Disney either the day we arrive in town or the day we are leaving.  Tortilla Jo's has a quick service window for to go and quick meals outside, they serve bowls, which are perfect for Keto eating.  On this trip we had time to waste before our flight left so we went into the restaurant and they were very accommodating.  I explained that I was looking for something Keto and my waitress suggested the Pork Carnitas plate, Since I requested no rice and beans she kindly offered if I would like a side of grilled veggies.  I am so grateful, it came with spinach, zucchini, and grilled onions.  This plate was huge, satisfying and delicious.  If you are staying at the Disneyland Hotel which is right by Downtown Disney or even at the Grand Californian, this would be a convenient place to eat at on your way back to your hotel.  Eating inside the restaurant is going to be more expensive so if you are trying to stick to a budget, I recommend eating outside at the Quick Service Taqueria Window.  There is plenty of seating outside.  I actually saw this option at quite a few restaurants in the Downtown Disney District.  



One thing I wish I would have brought into Disneyland is a reusable collapsible water container.  At Disneyland they have water refilling stations and we chatted with a couple who had these really cool silicone reusable water containers.  I drink a lot of water, so this is a necessity next time.  You can ask for water from any of the restaurants and they will give you a free cup of water and ice which I did a few times, a reusable water bottle would have been better.  There are no water refilling stations at California Adventure, I hope they change that soon.

Sticking with your Keto eating lifestyle while at the Disney parks is very doable and I am looking forward to my next visit to find and try more Keto food items.  I am very impressed with how many places are aware and mindful of all types of eating plans (Vegan, Gluten Free, and those with Food-Allergies) they really do aim to provide healthy eating options.
