I love Rice Krispie Treats!  I thought it would be fun to make Cinco de Mayo Rice Krispie Treats for our Cinco de Mayo Party.

I made these Patriotic Rice Krispie Treat Pops from 'Kid Friendly Things to Do'  for 4th of July last year and I thought I'd adjust it to mini size using my mini muffin tin and use the Mexican Flag Colors.

What you need:
Kellogg's Rice Krispie Cereal 
Mini Marshmallows
Butter (I use salted sweet cream butter) 
Wilton Color Right Food Coloring System
Paper Straws for the Stick (cut the straws in half)

You will need to make 3 batches in green, white and red to represent the Mexican Flag.

Ingredients:
3 Tablespoons of Butter
3 Cups of Mini Marshmallows
3 Cups of Kellogg's Rice Krispie Cereal

Melt the butter and marshmallows, add the food coloring, then add the Rice Krispie Cereal and mix well.

Food Coloring Instructions:
For the green color I used: 6 Drops of Yellow and 3 Drops of Blue
No food coloring for the white.
For the red color I used: 8 Drops of Crimson, 1 Drop of Red, 1 Drop of Brown

Spray your mini muffin tin with non-stick cooking spray.  Once you finish each batch, I pressed a mini ice cream scoop full into a mini muffin tin.  I poked a hole in the center with my paper straw, while mixture is still soft.  Once all three batches are finished I place red one onto the straw slid it up, then the white, then the green.

I love chips and salsa!  Whenever I show friends how to make homemade salsa they are always amazed at how easy it is to make.  If you have never tried, I encourage you to try this easy recipe.  

You can add or omit according to your taste.  I know some people do not like cilantro, I happen to love cilantro so adjust the recipe for your family.

I do not think my salsa is too spicy, but I have learned everyone has a different idea of what is spicy. If you do not like it too hot here are some things you can do to make it mild.

The heat in a jalapeno mostly comes from the seeds and ribs in the jalapeno.  You can remove those seeds and ribs for a milder salsa.  Start by just using one jalapeno and see how that tastes for you.  You can add a pinch of sugar to help balance out the heat.  You can add in some sweet baby bell peppers.

A tomato tip, if tomatoes are in season and they are bright red, I will use only fresh tomatoes, but if your tomato selection isn't great, you won't have a nice red salsa, so to help, you can use a small can of whole peeled tomatoes to give a brighter look.

When serving your chips and salsa, you can warm your chips in the oven for a little bit to serve delicious warm chips and fresh homemade salsa!  Yum!

Makes: 4 cups

What you need: 
4 Large Beef Steak Tomatoes or 8 Roma Tomatoes
2 Jalapenos
1/2 of an onion (I have used red, white and yellow onions, feel free to use what you have)
2 Cloves of Garlic
Handful of Cilantro
1/2 of a lime or lemon 
Garlic Salt to taste
Cumin to taste

Directions: 
I use my Ninja Blender so I do not have to chop that much, just half and quarter everything. Depending on the blender or food processor you use to pulse the ingredients you may need to chop the items smaller.

You want to add the things that are more difficult to blend towards the bottom of the blender, near the blade.  I start with onion, garlic, jalapeno, tomatoes then cilantro at the top, add in the juice of 1/2 a lime or lemon, a couple shakes of garlic salt and cumin and pulse a few times.  I like a chunkier consistency, you can blend to the consistency you enjoy.

Sombrero Craft

What you need:
Small paper plates, or bowls.
Small paper cups.
Hot Glue Gun
Pipe cleaners, pom poms, ribbon if you want.

Glue the cup to a plate or bowl, the bowl looks more like a sombrero but a plate will work too.  A hot glue gun works faster, you can use regular glue it just takes longer to dry.  Glue the pipe cleaner around the bottom of the cup and decorate with pom poms or ribbon.  You could use these for the kids to hold chips or cookies, but I thought it's mostly for fun, to give them something festive to create.
You could even punch holes through these sombreros and turn it into a decorative banner.

Round Sugar Cookies (store bought or homemade)
Gum Drop Candy
Frosting and Sprinkles

Bake your sugar cookies ahead of time so they are ready for the kids to decorate.  Apply frosting around the edge of the cookie for the hat brim, add sprinkles, dip the gum drop candy in frosting, stick to the center of the cookie.  
You could make these for a festive dessert, but I thought this would be an easy and fun thing to keep the kids busy too.  You could have most made, then have each child make their own to eat.  



DIY Maracas
What you need:
Plastic Spoons
Plastic Easter Eggs
Filler (Pasta, rice, popcorn kernels, dry beans)
Washi Tape

Fill your plastic eggs with noise maker items (Pasta, rice, popcorn kernels, dry beans).  I used macaroni noodles figuring if they came apart, they are big enough to clean up easily rather than rice.
Put two plastic spoons facing each other, place the egg in the middle, use washi tape or even blue painters tape and start wrapping around the handle, work your way up.  Let the kids have fun with these DIY Maracas.

Create your own DIY Cinco de Mayo Fiesta Photo Booth Station.  Your friends and family will have a blast snapping pictures and selfies.  


My boys love taking silly photos.  I have done photo booth station's at my kids birthday parties and I say it's for the kids but the adults have so much fun with it too.

Creating your own Photo Booth Station is a inexpensive way to have fun and end up with lasting memories.  

You can create your own backdrop a number of ways.  Use a bed sheet, shower curtain, gift wrap paper, streamer (this is my favorite) it's super easy and cheap.  

This Cinco de Mayo backdrop pictured below was made with 4-poster boards and tissue paper.  I love the piñata look it gives but you could totally re-purpose this for a luau party too.  

First I taped the four poster boards together, then I folded a sheet of tissue paper in half length-wise.  Cut slits starting on the non-folded bottom and left a couple inches at top.  I used scotch tape to put it on the poster board, starting at the bottom of the poster board.  I love the way it turned out!

For props, you probably already have things you can use.  Use hats, glasses, scarves, fun jewelry, whatever you have.  You could easily create props with card-stock.  I found these Cinco de Mayo paper props at Hobby Lobby.

Cinco de Mayo DIY Photo Booth

Simple Streamer Back Drop

My grandmother and my mom make "real" buñuelo’s with homemade tortilla dough and they are delicious.  I decided to take the easier route and use store bought flour tortillas, they still turned out super yummy, especially for my kids who love Taco Bell Cinnamon Twists, lol.
  
This is a fun treat to have anytime, but with Cinco de Mayo right around the corner I thought I'd share, these would be easy to serve at a Cinco de Mayo party or Mexican dinner theme night for your family, make these as dessert on your next Taco Tuesday.

Ingredients:
12 Flour Tortillas
1 teaspoon Cinnamon
1/2 cup of Sugar
Canola Oil 

Directions:
Cut your tortillas to desired shape, I normally do triangles.  You could use cookie cutters or do strips.

Mix together the cinnamon and sugar in a small bowl.

Heat your oil to fry the tortillas, you can use a wooden spoon placed in the hot oil once bubbles start to form around the wooden spoon it's ready to go, or dip a tortilla in and look for those bubbles.  You do not want your oil too hot, during the process if you notice the tortillas are browning too quickly lower the heat gradually.

Once light and golden brown transfer to a paper towel to drain off excess oil, sprinkle both sides with cinnamon and sugar mixture while warm.  Coat and serve.  

These are best served warm.  If you need to make ahead of time, just re-warm them in the oven, but not too long, don't use the microwave, or they will not be as crispy.  

If you want to take these up notch, you can serve with vanilla ice cream and strawberries or serve with a maple syrup mixed with caramel sauce, or drizzled with honey, oh my goodness!
