I am not a big sports fan, but with four sons, and a sports loving husband I embrace the game the best I can.  Fun food and party planning help me get in the mood for the big game.

Last year I kept it really simple, I found football decorations at the Dollar Tree, I made a boxed chocolate cake and turned it into a football and had the normal football food; Nachos, Dips, Pizza and drinks.  The boys had some of their cousins over, I had my family over, my dad is a big Raiders fan and everyone had a great time.

Here are some pics from our last game day party:

That is another thing I enjoy about sports, is people getting together to go to a game or enjoy the game together on the big screen.

This is some of what I have planned for the big game this Sunday, I thought I'd share what recipes I am trying out.  I will let you know how it all turns out later.

Game Day Menu:
In honor of this years Superbowl teams (New England Patriots & Atlanta Falcons) I am making New England Clam Chowder and Peach Dump Cake.

Appetizers:
Nachos, Spinach Artichoke Dip, Guacamole, Chips & Salsa

Finger Foods:
Mozzarella Sticks and Jalapeno Poppers (Compliments of Farm Rich)

Dessert:
The Peach Dump Cake, Football themed Rice Krispie Treats, and possibly some football cupcakes.

I am super excited about making a Snack Stadium this year and I am thankful to Upstate Ramblings who made it super easy with directions on How to Build the Ultimate Football Snack Stadium.
Here are the recipes I found on-line that I plan to use.

Worlds Best Spinach Artichoke Dip from Rae Gun Ramblings

Slow Cooker New England Clam Chowder from Baked by Rachel

Peach Dump Cake from Food Network's Ree Drummond

New England Patriots Rice Krispie Bites from Two Sisters Crafting

Atlanta Falcons Rice Krispie Bites from Two Sisters Crafting

Football Cupcakes from The Baker Chick (although I will probably end up just using a boxed cake mix)

Looking for an easy breakfast recipe other than cereal.  I love to prepare this on Saturday or Sunday and have it ready for my husband and children during the week.

This especially works well for my husband because he likes to eat breakfast later in the morning not as soon as he wakes up and he also leaves earlier than everyone else in the morning, so he can take it to go.  It also works for a low carb eating plan, perfect if you are trying to lose weight!

I first made this breakfast egg bake for a family brunch, everyone loved it!  Then I decided this would be perfect to have ready to go ahead of time for my family during the week.  I hope you add this in to your weekly menu planning, it will save you time and keep your families bellies full.

Having this prepared ahead of time eliminates the use of pans and cooking eggs each morning.  Also if you are on the go it is just as quick to heat up a serving of this egg bake as it is to pour a bowl of cereal.  It will help with sticking to those budget goals, so you don't have to stop and pick up fast food.  I hope you enjoy!

This recipe is also easy to adapt to whatever you have in your refrigerator, below you will find a basic recipe of what I usually make.  When I have mushrooms and spinach I add that in at times, I have added tomatoes, green onions, to change it up, also you can substitute bacon for sausage.   Use what you have on hand and what your family likes.

This recipe is for a 9x9 baking dish, makes 9 servings.

Ingredients:
6 Eggs
4 Sausage Links
Shredded Cheese
1/3 Chopped Bell Pepper (I use a mix of red, green, orange)
1/3 Cup Sour Cream
1/3 Cup Salsa
Salt & Pepper to taste optional (It really does not need any, my husband doesn't like pepper so I usually don't add any)

Directions:
Preheat Oven to 350 Degrees
Wisk Eggs
Add Sour Cream, wisk together (there will be little clumps of sour cream)
Add Bell Pepper and Salsa
Pour in egg mixture into baking dish sprayed with non-stick cooking spray.
Bake for approximately 15 minutes to let eggs sit, then add cooked sausage and bake for an additional 10-15 minutes.

I add the sausage half way through so it doesn't clump all together and so it doesn't sink to the bottom.  You don't have to do this step, but I prefer it this way.

Today is National Pumpkin Day!  I have posted this recipe before but I thought I would share again in honor of National Pumpkin Day.  It's quick and easy to make!

I love the pumpkin smoothie at Jamba Juice.  Since tasting this yummy treat I wanted to see if I could make a similar one at home.  I used what I had at home and it came out quite tasty.  I would not say it is the same as the Jamba Juice creation but it satisfies my pumpkin smoothie craving.
With the Fall season, you see pumpkin creations everywhere Starbucks, Jamba Juice, even McDonald's.  If you went out and purchased one of these treats every day during the fall season, the cost of these treats can add up quickly.  Although it’s fun to splurge every now and then, I encourage you to experiment at home.  It is good for your budget, and also fun to get in the kitchen.  I don’t know about you but there is just something about Fall and Winter that has me desiring to cook and bake more.
With Pinterest and the Internet at our fingertips you can usually find a copycat recipe for a lot of restaurant treats.  You can usually find a lot of healthier versions as well, which comes in handy if you are trying to eat healthier.  This is not one of those lighter versions but again, that is the great thing about cooking at home, you can substitute to fit your dietary needs.
Pumpkin Smoothie Recipe
This recipe made two adult servings and three small kids cups.
1 cup Libby’s Pumpkin Purée
1 cup of Ice
2 cups of Whole Milk (You could easily substitute with Almond Milk or Soy Milk)
2 cups of Vanilla Bean Ice Cream (this is what I had, you can substitute with frozen yogurt or regular vanilla ice cream)
A sprinkle of Cinnamon
A sprinkle of Nutmeg
Place all the ingredients in your blender and blend until smooth.  Pour and enjoy!
