I recently attended an event with some local influencers and we were introduced to some great local Sacramento businesses.  Some I already knew and have visited, others were new to me, I want to share these great local Sacramento businesses with you all.  

I am so grateful to Kellie over at @EmptyNestMomLife who put together this wonderful evening of fun.  I met Kellie on social media and she has been so kind and supportive.  I love that even though her kids are older, grown and some in college as her name says @EmptyNestMomLife, she still gives love over on my page even though I share a lot of stuff geared towards families of younger children.  

I love her style, home décor, and all she shares.  I love that she has a lot of fun with her college age kids and it gives me a glimpse into that next season in our lives and what we have to look forward to.  I love how she supports, and promotes great local Sacramento businesses.  

Kellie and these local businesses went above and beyond and really showered us with love and gifts.  One thing I love about the influencer community I have had the good fortune of meeting and the local businesses is we all know that in supporting each other, we are supporting a dream, someone's vision and purpose in life.

When you like, comment and share my posts, it is so much more than "just a like".  When you shop local and buy flowers, get a new pair of earrings from a local boutique it is so much more than "just making a purchase".  

Behind every entrepreneur, small business, life coach is a real person, who is not only trying to make a living but I truly believe business owners, influencers, entrepreneurs are really about community and making a difference.  

Starting your own business, starting a blog, sharing on social media, takes a lot of work.  Those who continue, do so because they really do love it and love their community.  Believe me now that I have blogged for years and seen the good seasons, of business and the low seasons, I know at a greater level just how much heart goes into these businesses.

Kimpton Sawyer Hotel - I have never been and wow, is this a hidden gem.  Located right in the heart of Sacramento.  We were able to sit rooftop near the pool and you have a beautiful view of the city, Golden 1 Center, and DOCO.  I would love to visit again soon, I think this would be a great place for a Staycation. Ettore's - What more do I need to say, Ettore's is a Sacramento favorite.  They actually made our wedding cake many years ago! We love Ettore's Bakery and Café.  They have patio dining available as well as curbside pick up. Give them a follow and see their lovely holiday creations. On this night they brought all kinds of goodies, Key Lime Pie, Mocha Cupcakes, Chocolate Chewy Brownie Cookies, beautiful Fresh Fruit Tarts, their famous Lemon Bars, and more.

Polanco Cantina DOCO - We got to try the chips and salsa and guacamole!  Polanco Cantina DOCO is a restaurant serving Mexican-inspired cuisine celebrating the bounty of central California.  While we were on the rooftop we had a great view of this restaurant and they have great outdoor seating.  I hope to visit soon, I love Mexican food this would be a great date night option. FYI they have FREE parking in the Central DOCO Lot. Enter the parking garage underneath the Century Theater, on J St., East of 5th.

Looking for something new and fun to do this fall? Placer County now has a new option for drive-in fun with the family - which also has a Kidz Zone on site too (as well as REAL bathrooms, not porta-potties!)! Quarry Park Adventures is expanding into the evening with Drive-Ins at the Quarry beginning the weekend of Sept. 25th through at least November 6th. This is a fun, safe weekend option for local families. 

Quarry Park Adventures is proud to announce a brand-new program to bring some fun to the Quarry after dark every weekend through at least Halloween, Drive-Ins at the Quarry beginning Friday, Sept. 25th with classic family favorite, Jurassic Park, and Saturday, Sept 26th with Disney’s Moana. Movies will begin at 7:30 p.m. and tickets can be purchased online for $25 per car. 

Spaces are limited in the parking lot which will be converted on Drive-In weekends in partnership with City of Rocklin which was not able to produce their Movies in the Park series this summer due to COVID-19. All cars will be socially distanced. Masks will be required outside of patrons’ vehicles. Restrooms will be available with staff monitoring to manage crowding during queueing and minimize socializing. Packaged snacks will be available for purchase through Quarry Park Adventures and patrons are encouraged to bring their own snacks as well.

Quarry Park Adventures is an outdoor recreation experience located off Rocklin Road in the heart of Rocklin’s up-and-coming Quarry District, near Interstate 80. The one-of-a-kind adventure park operates out of the Big Gun Quarry, one of the largest, at its peak operation, and most historic working granite quarries in California. Quarry Park Adventures is operated by seasoned adventure attraction company Adventure Operations LLC out of Colorado in partnership with the City of Rocklin. Quarry Park Adventures Announces Drive-Ins at the Quarry, Starting Sept. 25th

Looking for something new and fun to do this fall? Placer County now has a new option for drive-in fun with the family - which also has a Kidz Zone on site too (as well as REAL bathrooms, not porta-potties!)! Quarry Park Adventures is expanding into the evening with Drive-Ins at the Quarry beginning the weekend of Sept. 25th through at least November 6th. This is a fun, safe weekend option for local families. 

Quarry Park Adventures is proud to announce a brand-new program to bring some fun to the Quarry after dark every weekend through at least Halloween, Drive-Ins at the Quarry beginning Friday, Sept. 25th with classic family favorite, Jurassic Park, and Saturday, Sept 26th with Disney’s Moana. Movies will begin at 7:30 p.m. and tickets can be purchased online for $25 per car. 

Spaces are limited in the parking lot which will be converted on Drive-In weekends in partnership with City of Rocklin which was not able to produce their Movies in the Park series this summer due to COVID-19. All cars will be socially distanced. Masks will be required outside of patrons’ vehicles. Restrooms will be available with staff monitoring to manage crowding during queueing and minimize socializing. Packaged snacks will be available for purchase through Quarry Park Adventures and patrons are encouraged to bring their own snacks as well.

We love making this easy, delicious Chicken BBQ Dip.  This is great for a snack but also as a meal, we often do it as a weeknight dinner.  I love that this is a great low-carb, Keto-friendly option that your non-Keto friends and family will love too!

Being Keto we love to eat this with Pork Rinds, and Celery.  This Easy Chicken BBQ Dip is perfect for game days, game nights, movie nights, really all of the nights. 

What you need:

Shredded Chicken (I used 4 thin chicken breasts)

1 Block of Cream Cheese

1 Cup of Shredded Cheese

1 tsp of Garlic Salt (optional)

1/4 cup of BBQ Sauce

1-2 Tablespoons of Sriracha Sauce (we like it a little spicy)

1/2 cup Diced Red Onion

Chopped Cilantro (depends on how much you like) I love Cilantro the more the better.  

Directions:

I cooked my chicken in the Instant Pot.  Placed in Instant Pot with one cup of water and hit the meat setting.  Let pressure naturally release.  Let the cream cheese sit out, to soften while chicken is cooking.  

Once chicken is cooked, shred.  I love to use my Kitchen Aid Mixer, the chicken shreds easily and quickly.  

Add in all the other ingredients to the shredded chicken and mix. 

Spray baking dish with non-stick spray, pour dip into baking dish.  Top with extra cheese, I used two handfuls.  

Place in 450 degree oven for 20 minutes.  

Once cheese is melted and browned, sometimes we put it under the broiler if we want it a little more browned on top.  

Then sprinkle a little more diced red onion and cilantro and drizzle some more BBQ sauce. 







We love to eat this with pork rinds when hot and then with celery and sliced cucumbers the next day when the dish is cold.  If you are not on Keto or Low Carb this is great with tortillas chips, pita bread, sourdough bread, whatever you want to dip.  Hope you enjoy this delicious easy to make Chicken BBQ Dip.

This September I celebrated my birthday, I am 39 years old!  I have not always been a big birthday party person, for my kids yes, for myself not so much.  Even growing up, we celebrated birthdays when we were young, but after becoming a teenager, we really did not have big parties.  It has become more popular in recent years to see people celebrating their birthday all month long and even half birthday celebrations, which I think is great!
Life is too short and we really should recognize what a gift it is to have a birthday. With the recent passing of Chadwick Boseman at the young age of 43, it made me more aware of how we should see each birthday as so very special.  I have a friend who just turned 50 and she wasn't too excited about turning 50, I encouraged her that not everyone gets to see 50.  We really should embrace every birthday.  I get that we are not always excited about the wrinkles, gray hair and some of the things we experience as we age.  Aging is really a beautiful thing and I am sure I will need someone to remind me of this very thing when I turn 50, I hope I am excited about it.  One thing we hear is your not just getting older you are getting wiser, that is true, there are some things you just don't know until you know.  Let's be grateful for the wisdom we gain with aging.

Every September I am reminded of the tragic events that took place on September 11th, and again I am reminded of just how fragile life is.  We should not take one day for granted.  I read a post on social media, I apologize not sure who first posted it, because I seen many screenshots of it.  It read "On this day (September 11th), 246 people went to sleep in preparation for their morning flights, 2,606 people went to sleep in preparation for work in the morning, 343 firefighters went to sleep in preparation for their morning shift, 60 police officers went to sleep in preparation for morning patrol, 8 paramedics went to sleep in preparation for the morning shift.  None of them saw past 10 AM on September 11th."  While there are so many things I could share about that day, I am reminded again of how each day is a gift.  

When I say celebrate every birthday, I am not saying you have to throw a huge party or go on a big trip, although if you can those things are nice, what I am saying is you should take time to really pause and be grateful for the years you have had and the new year you are entering.  

Yes you should have your favorite meal, or receive that special gift you have been wanting, surround yourself with friends and family if you can, take the trip, but most importantly spend quality time evaluating how far you have come, and setting goals for what you would like to accomplish in the upcoming year.  See your birth date as a New Year, as a reset, as an embrace for all things good. Dream, plan, and be grateful for the simple things.  
I will say don't think you have to go on a trip or do something big to make a birthday special.  While those things are fun and I think you should plan ahead and budget for those trips you have been wanting to take.  Simple celebrations at home can be just as special.  

One thing Covid-19 has made me more mindful of, is to be grateful for the small things and see the small things as special.  Seeing people get creative with birthday celebrations and doing the drive by birthday greetings and family Zoom parties, really reminds me of what is important and that is time with our loved ones.  I see before Covid-19 and all the shelter in place and quarantine, I took for granted family gatherings and friend meet ups.  Sometimes I looked at events as another thing "I had to go to" instead of seeing them as something "I get to go to".  After going through Covid-19, I am reminded of just how special a family get together is.  I now know at a greater level what a gift it is to go out with your loved ones to dinner or to a fun outing, I always want remember the sense of gratitude for all the simple things that Covid-19 has made me more aware of.  
One other thing I wanted to mention is don't expect people to know what you want for your birthday.  It is definitely nice to have a surprise party thrown for you, and to receive that special present you have been wanting.  I want to encourage you to let your loved ones know what you want and guess what, you can plan your own party.  Again, life is too short, want a party, plan one!  Been meaning to go on that girls trip, plan it!  Too often I see people get bummed and depressed over their birthday, because someone else didn't do what they thought they should have.  The people in your life are not mind readers and often times, even if they meant to plan something they too are unsure of what you want or how to go about it  So express yourself.  Tell your spouse what you would like to do for your birthday or anniversary and don't wait for them to do it all just because you voiced it.  Express what you would like and if you don't see them planning or booking the trip, then seek how you can help bring it about. Make sure you watch your attitude, I am not saying plan your own party and have the attitude that "if I don't do it no one will." No, have the attitude of life is short and I want this day to be special and celebrated with those I love.  Don't be bitter and have a sour attitude if you have to plan your own party.  Do it with joy, that hey being with these people and doing this thing together is what is special and I am not going to let another day, or year go by without celebrating together.  

Maybe it's dinner out, maybe it's dinner at your home, maybe it's going on a hike, maybe it's planning that family photo shoot you have been meaning to do.  

This year for my birthday I really wanted to still have cake, even though I am eating Keto.  So guess what I bought my own Keto Cake  I am so glad I did!  If you are local here to Sacramento and a fellow Keto eater, I highly recommend Butter and Nut Bakery.  She is a local Sacramento baker who makes all kinds of delicious Keto baked goods, cakes, cookies, donuts, cupcakes and more.  You can visit her website which has an ordering window once a month, you place your order and than she has pick up times and locations throughout Sacramento and the Bay Area available once a month, so you do have to plan it out a little.  I think it makes it even more exciting, I had this delicious and beautiful Keto cake to look forward to all month long.  I found Butter and Nut on Instagram and messaged her to express my interest, Mel was kind enough to message me and remind when the ordering window was open.  
I received a new laptop for my birthday, which I am very grateful for and is something I wanted and needed.  I was able to go out to dinner with my husband on my actual birthday, and we still had our weekly date night, being able to go out twice in a week and have that time with my husband was special.   My boys celebrated with me at home, I had time with my mom and sister, those things are all so very important.  I had told my boys I wanted to watch Disney+ movies with them, with my pick of the movies and you know what it really is the time together and I am so grateful they have had a great attitude about letting me pick even what they would call "girl movies".  On my birthday one of my sons went on a walk with me, it's those small things that really stand out in my mind as so special.  My in-laws scheduled to take my husband and I out for dinner along with my husbands brother and new sister-in-law whose birthday is also in September, it's these types of things that make my birthday month so sweet, time spent with loved ones. 
Maybe your birthday has already past, start thinking and planning now what would make your day special.  Remember the simple things too, maybe watching the sunrise or staying up late and watching the sunset on your birthday.  Make a Birthday wish list not necessarily of things although some may be on there, make a list of experiences, people you want to share your day with, people you want to go to lunch with that month, someone you would call and thank for their investment in your life and how they have impacted you, to become all you are.  
Lastly if you eat a special way, Keto, Vegan, Paleo, Mediterranean, whatever it may be, find a way to celebrate, there are so many specialty bakeries and local people who would be happy to bake you a sweet treat that still fits your way of eating.  You can be Keto and still have cake!  Here are a couple of my favorite cake sayings:

Celebrate Each and Every Birthday is a Gift

September is Better Breakfast Month...Hello Eggs!  

I am so excited because eggs are a Keto staple and something we eat a lot at our house.  I am sharing two egg recipes that you will love!  First up Egg Bites, you know those Egg Bites that people buy at Starbucks for $4 and the second egg dish, Pizza Eggs perfect for brunch or dinner.  

We recently ordered a silicone egg bite mold to make our very own egg bites in our Instant Pot, easy to make and budget friendly.  We have been wanting to change up our normal scrambled eggs and over easy egg breakfast meals. I love trying new recipes using eggs!

I am also going to share some pizza eggs we made that are perfect for brunch, lunch and even dinner.  Pizza for breakfast always sounds good.  This is healthier than pizza and a great Keto friendly meal option.   

What are Egg Bites you ask.  You probably have seen egg bites at Starbucks, they are pretty pricey at over $4.  You can buy a whole dozen eggs for just a little over $4 and make a whole lot of egg bites at home.  I only used 4 eggs and other ingredients I already had at home to make 14 egg bites.  

These egg bites are perfect to make ahead and have ready to grab and go for those busier mornings.  They re-heat nicely in the microwave and stay moist.  These egg bites remind me of my Easy Breakfast Egg Bake, just in bite size form.   

Egg Bite Recipe

What you need:

4-Eggs

1/4 cup heaving whipping cream

1/2 cup sour cream

Shredded Cheese

Cooked Bacon chopped

Diced Jalapenos (I used jalapenos because I have a giant jar at home that I need to use up).  You could use diced bell peppers, onions, diced mushrooms, whatever you have on hand.  

Directions:

Place 4 eggs, heavy whipping cream, sour cream and cheese in your blender.  I used my Magic Bullet.  

Blend all ingredients.

Spray the silicone egg bite mold with non-stick spray.

Sprinkle in each little cup, diced jalapenos and chopped bacon pieces.  

Add in blended egg mixture.  

Cover silicone mold with foil.

In Instant Pot, add 1 cup of water and trivet, place silicone mold on top of trivet.  

Cook in Instant Pot for 8 minutes, let the pressure naturally release for 10 minutes. 





Pizza Eggs

What you need:

Eggs

Pizza Sauce/Marinara Sauce

Shredded Mozzarella 

Pepperoni

Directions:

In a skillet place two mason jar lids to hold and keep the eggs round.  

Spray skillet and the mason jar lids thoroughly with non-stick spray, be sure to spray the inside of the mason jar lid.  

Crack egg into the mason jar lid.

Add a spoonful of pizza sauce or marinara sauce on the egg white part. 

Sprinkle shredded mozzarella cheese and top with pepperonis.  

Cover the skillet with a lid and cook for 3-4 minutes. Three minutes is perfect if you like a runny yolk, four minutes if you want the yolk cooked through.  

These Pizza Eggs would be a fun way to have breakfast for dinner!

September is Better Breakfast Month...Hello Eggs!  

I am so excited because eggs are a Keto staple and something we eat a lot at our house.  I am sharing two egg recipes that you will love!  First up Egg Bites, you know those Egg Bites that people buy at Starbucks for $4 and the second egg dish, Pizza Eggs perfect for brunch or dinner.  

We recently ordered a silicone egg bite mold to make our very own egg bites in our Instant Pot, easy to make and budget friendly.  We have been wanting to change up our normal scrambled eggs and over easy egg breakfast meals. I love trying new recipes using eggs!

I am also going to share some pizza eggs we made that are perfect for brunch, lunch and even dinner.  Pizza for breakfast always sounds good.  This is healthier than pizza and a great Keto friendly meal option.   

What are Egg Bites you ask.  You probably have seen egg bites at Starbucks, they are pretty pricey at over $4.  You can buy a whole dozen eggs for just a little over $4 and make a whole lot of egg bites at home.  I only used 4 eggs and other ingredients I already had at home to make 14 egg bites.  

These egg bites are perfect to make ahead and have ready to grab and go for those busier mornings.  They re-heat nicely in the microwave and stay moist.  These egg bites remind me of my Easy Breakfast Egg Bake, just in bite size form.   

Egg Bite Recipe

What you need:

4-Eggs

1/4 cup heaving whipping cream

1/2 cup sour cream

Shredded Cheese

Cooked Bacon chopped

Diced Jalapenos (I used jalapenos because I have a giant jar at home that I need to use up).  You could use diced bell peppers, onions, diced mushrooms, whatever you have on hand.  

Directions:

Place 4 eggs, heavy whipping cream, sour cream and cheese in your blender.  I used my Magic Bullet.  

Blend all ingredients.

Spray the silicone egg bite mold with non-stick spray.

Sprinkle in each little cup, diced jalapenos and chopped bacon pieces.  

Add in blended egg mixture.  

Cover silicone mold with foil.

In Instant Pot, add 1 cup of water and trivet, place silicone mold on top of trivet.  

Cook in Instant Pot for 8 minutes, let the pressure naturally release for 10 minutes. 





Pizza Eggs

What you need:

Eggs

Pizza Sauce/Marinara Sauce

Shredded Mozzarella 

Pepperoni

Directions:

In a skillet place two mason jar lids to hold and keep the eggs round.  

Spray skillet and the mason jar lids thoroughly with non-stick spray, be sure to spray the inside of the mason jar lid.  

Crack egg into the mason jar lid.

Add a spoonful of pizza sauce or marinara sauce on the egg white part. 

Sprinkle shredded mozzarella cheese and top with pepperonis.  

Cover the skillet with a lid and cook for 3-4 minutes. Three minutes is perfect if you like a runny yolk, four minutes if you want the yolk cooked through.  

These Pizza Eggs would be a fun way to have breakfast for dinner!
