After seeing this week’s ad one of the meals I'll be adding to our menu this week is: 
Grilled Chicken with Summer Pasta Salad.
When I make this summer pasta salad I like to keep my chicken pretty basic. I want to enjoy the tangy flavor of the pasta salad. I usually just use garlic salt and pepper or a Mrs. Dash blend sprinkle on both sides of the chicken breast and grill approximately 4-6 minutes on each side depending on the thickness.

Here is my Summer Pasta Salad Recipe:
8 oz. of Spiral Rainbow Pasta cooked and drained.
3 cups of assorted cut up veggies.
I use bell pepper, cucumber, tomatoes, broccoli, carrots, and red onion.
1/2 cup cubed cheddar cheese
2 cups of Italian Dressing (if you want a creamy version use 1 cup Italian Dressing and 1/2 cup Mayo, mix)

I like to use the Kraft or Hidden Valley Italian Dressing. You could add olives, asparagus or other veggies you like.  This is a great simple dish to bring to a potluck, if it's more of a main dish I like to add salami, yum!

You can also use bow tie pasta, penne or macaroni noodles, I prefer the Rainbow Rotini I think the colors and spiral look make it look prettier.  

Directions:
Cook pasta according to package directions, drain and cool pasta noodles in a large bowl.  
Combine all ingredients except Italian dressing, add that last.  I like to add dressing and chill for 1-2 hours.  I have made this before ahead of time for a party, I still prefer not letting the dressing sit too long, I've added half the dressing left to cool and chill and then add the other half of the dressing when I'm ready to serve.

Looking for a way to stay cool and have fun this Summer? Our family loves going to Raging Waters! It is a great way to beat the Sacramento summer heat and have fun all summer long. We love the water slides, wave pool, and when we want to chill our favorite spot is floating in the Calyspso Cooler Lazy River! The Treehouse Reef and Shark Pool are perfect for little ones.  Free life jackets are available throughout the park at no charge. Life jackets are required for guests under 48" tall to use the wave pool.  With a season pass, you also get free entrance to the California State Fair (July 13-July 29, 2018).  
Raging Waters has budget-friendly options to enjoy fun all summer long.  They have a payment plan option and a Parking Pass for $49.99 which is a great savings. Note the parking pass is not valid during State Fair dates.

They have an All Season Dining Pass available which again pays for itself, they don't allow outside food or drink except sealed water bottles so I encourage you to buy the dining pass and enjoy their food options all summer long. 


We plan ahead of time and budget for our passes, parking pass, dining passes and souvenir cup. This is a great tip to keep in mind for next year, put a little bit of cash every month in an envelope for summer fun, then when summer comes you have designated funds set aside and it is easier on your monthly budget.  

With your All Season Dining Pass you receive a full meal with every visit.  They have a Carls Jr inside the park, NorCal Pizza next to Carls Jr, and near the Wave Pool is Beach Side BBQ which serves barbeque, chicken strips and more.  They have other fun treat options like Rita's Italian Ice, Yogurtland and Dippin Dots, not included with the Dining Pass. Some of my favorites last year were the BBQ Brisket Sandwich and Pulled Pork Nachos.  If you are going to frequent all summer long I recommend the UNLIMITED Refill Souvenir Cup!  


There are private Cabana rentals available, that come with lounge chairs, a table and inner tubes.  You can reserve these on-line or at the park on a first come first serve basis.  We have not rented a Cabana we have never had a problem finding a lounge chair and area to relax, there are plenty of chairs and grassy spots to lay out a towel and enjoy the sunshine.

Be sure to bring sunscreen and hats.  I also recommend swim shoes, the cement gets extremely hot and when you are walking from the wave pool to a slide, those swim shoes come in handy.  

Another item I love bringing is a waterproof phone pouch, not only for my phone but to carry my passes and cash/card.  On your season pass is a sticker for entry into the State Fair, you don't want that sticker to get wet, they charge a small fee to reprint those stickers.

After seeing this week’s ad one of the meals I will be preparing for my family this week is: Beef Tri-Tip, Potato Salad, and Brussels Sprouts

Here is my Potato Salad Recipe:
Potatoes (2lbs serves about 8)
1-1/3 Cup of Mayo
1 Cup Diced Red Onion
3 stalks of Celery Diced
6 slices of Bacon cooked and chopped
Green Onions to garnish
Garlic Salt and Pepper to taste

Directions:
Peel, cut potatoes and place the potatoes in a pot with enough water to cover and bring to a boil. Cook for about 20 minutes, or until tender. Drain and cool.
Place Mayo, diced red onion, diced celery, chopped bacon in a bowl and combine.  Once potatoes are cooked and cooled stir into the bowl until evenly coated, top with chopped green onions for garnish. Refrigerate until ready to serve.  I like to make this a day ahead and refrigerate overnight.
Easy Brussels Sprouts Recipe:
2 lbs. Brussels Sprouts cut in half or quarters depending on size
1 tablespoon extra virgin olive oil
1/2 of an onion diced
Salt and Pepper to taste
4 slices of Bacon 

Directions: 
Bring a large pot of water to boil, cook the sprouts until barely tender approx. 3-5 minutes and drain.
Cook chopped bacon in a skillet, remove bacon once cooked.  
Add oil and diced onion to bacon drippings, once onions are translucent, add in the Brussels Sprouts and salt, pepper to taste, lastly, add chopped cooked bacon.  

Some variations: I've used a squeeze of a lemon to deglaze the pan at times.  I have also used a sprinkle of balsamic vinegar, just depends on what I am in the mood for.  I like to change it up and play with my food. I've also added minced garlic, ginger or red pepper flakes at times.

Veggie Cups with Ranch and Hummus
I love Ranch Dip it's so yummy but my new favorite thing is Hummus.  
I just use a Hidden Valley Ranch Dip Packet and Sour Cream, simple, and tasty, I try and use Daisy Sour Cream, I find it's thick and doesn't form liquid at the top like other brands.  

I know Hummus is super easy to make, I usually use store-bought Sabra or pick some up from a local restaurant.  Just the other day I picked up a small tub of Cilantro Hummus from Extreme Hummus in Citrus Heights OMG heavenly, I love cilantro and hummus so this is my all new favorite hummus.  If you are local I highly recommend them, they also have fries and chicken nuggets if your kids are not into Gyros and Hummus.  
Chicken Skewers - Expresco ProSticks
There are times when I make my own chicken skewers, marinate them overnight but when it comes to Memorial Day weekend when there are plenty of other things I am making my go to is the Expresco Chicken Skewers they come in 3 flavors Sweet Sriracha, Mediterranean Style, and Chipotle. I usually go with the Mediterranean Style.  They are fully cooked,  ready to eat and packed with protein.  Great for all my friends on the Keto diet.  You can find them at Safeway.

My hubby handles the grill and potato salad is easy to make ahead.

Red White & Blue Strawberries
What you need:
Strawberries, White Candy Melts, Blue Sprinkles


Wash and dry your strawberries.
Line a cookie sheet with wax paper.
Place 2 cups of white Wilton Candy Melts in a microwave safe bowl.
Add 2 teaspoons of canola oil to the candy melts, stir.
Microwave on your defrost setting for one minute, stir and then continue microwaving in 30-second increments stirring each time until all the candy melts are melted. I did approximately a total of 3 minutes, each microwave will vary.
Use a toothpick to hold the strawberry and dip in the candy melt, shake off excess.
Hold over a plate and use blue sprinkles on the bottom half of the white chocolate.
Place on wax paper and repeat.
Place in the refrigerator to set. 
Patriotic Oreos
What you need:
Oreos, White Candy Melts, Patriotic Sprinkles
Line a cookie sheet with wax paper.
Place 2 cups of white Wilton Candy Melts in a microwave safe bowl.
Add 2 teaspoons of canola oil to the candy melts, stir.
Microwave on your defrost setting for one minute, stir and then continue microwaving in 30-second increments stirring each time until all the candy melts are melted. I did approximately a total of 3 minutes, each microwave will vary.
Dip half of the oreo in the white chocolate, shake off excess.
Hold over a plate and use patriotic sprinkles on the white chocolate.  
Place on wax paper and place in the refrigerator to set. 


DIY S'more Bar - Simple Summer Fun 
What you need: Graham Crackers, Marshmallows, Hershey's Chocolate and Skewers.
You can also have Nutella, sliced strawberries or patriotic sprinkles to add to the fun.
Flag Platter
What you need: Blueberries, Cherries, and White Chocolate Pretzels. Arrange like a flag!
You could use raspberries or strawberries for more red ideas or do a mix, I did all cherries.  
Red, White, and Blue Drink
What you need: Ocean Spray Cran-Apple, Sobe Pina Colada and Blue Fierce Gatorade
This looks really pretty in a beverage dispenser but you can also let everyone make there own glass, my boys like making there own.  
The key to getting the layers is pouring each layer very slowly.
Start by pouring the Cran-Apple in your glass a little less than 1/3 because it will rise when you add the ice.
Step 2 fill the glass with ice
Then pour the Sobe Pina Colada very slowly over an ice cube so it doesn't just mix in with the red juice.  
Lastly, pour the blue Gatorade.
I read some people used the low-calorie Gatorade since it has less sugar it helps the liquids not to mix.  I just used regular Gatorade and it still worked. The low-calorie G2 blue is a really light blue and I like the darker blue of Gatorade Fierce.

Bring on all the Summer entertaining and patriotic parties! I am so excited about Summer!!!! I love the longer daylight hours, grilling, eating with friends and family in the backyard and of course trying out all those Pinterest finds.  Along with summer entertaining, we have Memorial Day and the 4th of July right around the corner.  

Here are six summer entertaining tips to keep in mind when hosting a get-together.

1. Simple Decor. Don't purchase patriotic platters and a lot of themed decorations when entertaining, use what you have and let the food assist you in your decorating. This is super easy with beautiful bright colors like Red, White, and Blue.  You can use, cherries, watermelon, raspberries or strawberries which is great because they are in season.  For white anything dipped in white chocolate is delicious am I right, fruit, cookies, Rice Krispie treats or salty pretzels, yum. For blue you can use blueberries, I've used blackberries, they can pass for the blue part and many times you can find blue tortilla chips to add to your spread or you can use food coloring or blue candy melts to make things blue.

Red, white and blue utensils in mason jars, are practical and a simple way to add to the decor.  
Small touches like flags that you can find many times 4 for a dollar, or fresh flowers from your rose bush, can add that special touch.  You can use mason jars for a vase and dye the water red or blue with food coloring.

2. Prepare ahead of time portioned out snacks.  This makes it easy for you and your guests.  You can place ranch dip and veggies in clear plastic cups, they are portioned out and disposable so no need to clean up a veggie tray after the party.  This also works for desserts, I have done this with red, white and blue jello cups, makes it easy for the kids to pick up their jello cup, enjoy and then toss the cup.  This saves time when it comes to the party clean up process.

Set up more than one condiment station.  We have a large extended family with lots of little kids, so even with something as simple as hamburgers and hotdogs, many times a line will form of people waiting to add ketchup, mustard, lettuce, and tomatoes.  Instead of having multiple squeeze bottles, use a cupcake tin, I like a 6 cup tin for this.  You can set up one at the kids' table and at a couple of different spots.  You can use the tin's to hold Ketchup, Mustard, Mayo, Relish but also pickles, tomatoes, and onions. I like using these because they are easy to pass around, a larger platter of condiments and fixings can be a little difficult to pass around, but a muffin tin is easy to pass around.  
4. Have a DIY Dessert Station.  I enjoy baking and making desserts but I know that is not true for everyone.  A DIY S'more Station is a great dessert that involves little preparation.  Set out the ingredients and as guests are ready for dessert they can make there own s'more. I find both adults and kids enjoy this interactive dessert.  It's fun to chat around the fire pit and make your s'more and it brings back those camping memories.  I've also done this with cupcakes and cookies if you have the cookies and cupcakes made set out the frosting and sprinkles and let your guests decorate their own, it's a dessert and activity in one.
5. Kids Fun Kit. If kids will be attending your get together have a kids fun kit ready.  This can be bubbles, chalk, squirt guns, sandbox toys or a new game.  I like the idea of bringing something NEW out because I know with my four boys if it's NEW or something I bring out that they haven't used recently it is more apt to keep them entertained during the party.  You can also bring different items out at different times, if you bring out a bag with all the things at once, the kids can lose interest quickly. Enjoy Your Self.  Entertaining should be fun not stressful.  I many times have to remind myself of this.  As a host it's easy to get caught up in wanting everything to be perfect or look pretty that we end up in the kitchen all night, standing behind the grill or constantly cleaning up and refilling stations. Try and keep things simple and have items you can have prepared ahead of time so you can relax, talk and enjoy your guests.  I know this is hard for mom's I watched my mom do this growing up and I do the same thing.  We are always cleaning, or doing "one more thing".  Remind yourself to sit and enjoy, take in all the wonderful sights and sounds of summer.  It goes by so fast.  Sit and watch the kids jump on the trampoline or swing on the swingset.  Enjoy the conversation with your friends. Although it is fun to have Pinterest inspired food and decor, I know the important thing is enjoying our time with our family and friends. Using a little bit of store-bought items and homemade items can help save you time and your sanity, so have a balance of both and enjoy simple entertaining this summer!

6 Summer Entertaining Tips

Bring on all the Summer entertaining and patriotic parties! I am so excited about Summer!!!! I love the longer daylight hours, grilling, eating with friends and family in the backyard and of course trying out all those Pinterest finds.  Along with summer entertaining, we have Memorial Day and the 4th of July right around the corner.  

Here are six summer entertaining tips to keep in mind when hosting a get-together.

1. Simple Decor. Don't purchase patriotic platters and a lot of themed decorations when entertaining, use what you have and let the food assist you in your decorating. This is super easy with beautiful bright colors like Red, White, and Blue.  You can use, cherries, watermelon, raspberries or strawberries which is great because they are in season.  For white anything dipped in white chocolate is delicious am I right, fruit, cookies, Rice Krispie treats or salty pretzels, yum. For blue you can use blueberries, I've used blackberries, they can pass for the blue part and many times you can find blue tortilla chips to add to your spread or you can use food coloring or blue candy melts to make things blue.

Red, white and blue utensils in mason jars, are practical and a simple way to add to the decor.  
Small touches like flags that you can find many times 4 for a dollar, or fresh flowers from your rose bush, can add that special touch.  You can use mason jars for a vase and dye the water red or blue with food coloring.
