After seeing this week’s ad one of the meals I will be preparing for my family this week is: Beef Tri-Tip, Potato Salad, and Brussels Sprouts
Here is my Potato Salad Recipe:
Potatoes (2lbs serves about 8)
1-1/3 Cup of Mayo
1 Cup Diced Red Onion
3 stalks of Celery Diced
6 slices of Bacon cooked and chopped
Green Onions to garnish
Garlic Salt and Pepper to taste
Directions:
Peel, cut potatoes and place the potatoes in a pot with enough water to cover and bring to a boil. Cook for about 20 minutes, or until tender. Drain and cool.
Place Mayo, diced red onion, diced celery, chopped bacon in a bowl and combine. Once potatoes are cooked and cooled stir into the bowl until evenly coated, top with chopped green onions for garnish. Refrigerate until ready to serve. I like to make this a day ahead and refrigerate overnight.
Easy Brussels Sprouts Recipe:
2 lbs. Brussels Sprouts cut in half or quarters depending on size
1 tablespoon extra virgin olive oil
1/2 of an onion diced
Salt and Pepper to taste
4 slices of Bacon
Directions:
Bring a large pot of water to boil, cook the sprouts until barely tender approx. 3-5 minutes and drain.
Cook chopped bacon in a skillet, remove bacon once cooked.
Add oil and diced onion to bacon drippings, once onions are translucent, add in the Brussels Sprouts and salt, pepper to taste, lastly, add chopped cooked bacon.
Some variations: I've used a squeeze of a lemon to deglaze the pan at times. I have also used a sprinkle of balsamic vinegar, just depends on what I am in the mood for. I like to change it up and play with my food. I've also added minced garlic, ginger or red pepper flakes at times.
