With the summer heat we have in California I am always looking for simple meals that will not heat up the house, I try and utilize the grill as much as possible. I also want a meal that is satisfying but doesn't leave me feeling weighed down.
Last week we made ribs and shrimp for dinner on the grill. It was such an easy meal to make and delicious. We cooked the ribs on the top rack of the grill, it was so nice to place the ribs on the grill and leave them alone for an hour, just turning them over after 30 minutes, and the shrimp were made in less than ten minutes about five minutes on each side.
We marinated the shrimp in this earthy Ginger Sesame Marinade by The Ginger People. The sauce is gluten-free and GMO-free. I only used 2 Tablespoons for a large size bowl of shrimp and the juice from half of a lime, each tablespoon only has 2 Carbs which is nice if you are watching your carb intake. The ginger in the sauce adds a natural sweet heat and the sesame adds toasty richness, this sauce was full of flavor. I only marinated the shrimp for about 30 minutes, and it was tasty, you could absolutely marinate longer or overnight.
I placed the marinated shrimp on soaked wooden skewers along with diced bell peppers and onions. Oh, my these were delicious!!!

Ginger Sesame Grilled Shrimp Skewers
Ingredients:
Shrimp, The Ginger People Ginger Sesame Sauce, 1/2 a lime, diced bell peppers and red onion.
Directions:
1. Soak wooden skewers in water.
2. Marinate the shrimp in 2 Tablespoons of The Ginger People Ginger Sesame Sauce and the juice from 1/2 a lime.
3. Dice Bell Peppers and Red Onion.
4. After marinating for at least 30 minutes (longer if possible) place the shrimp, bell peppers and diced onion onto the skewers.
5. Cook on the grill for approximately 5 minutes on each side, until the shrimp are cooked through.
